Maureen Kuboka is a PhD student at the Swedish University of Agricultural Sciences, Sweden and a Graduate Fellow at the International Livestock Research Institute, Kenya. She holds a Bachelor's degree in Food Science and Technology and a Master's degree in Food Safety and Quality from the University of Nairobi, Kenya. Her research and career interests are in food safety and nutrition security in One Health context.
Maureen has previously conducted research on mycotoxins in the dairy value chain as well as postharvest technologies along the fruit and vegetable value chains. She has over four years of experience training food safety and hygiene among food handlers in the informal business sector and smallholder farmers. Her current research seeks to understand priority biological pathogens in food commodities in informal markets in the East African Community (EAC) countries and assess the implications for public health.
